Being brand new to the art of curing meat. At present I have a chicken in a hot brine . Using Australian Kosher Salt, I don’t know the alternative to Kosher salt in Sydney Australia, I tried for weeks to fond Kosher salt without success . I have a new Hark patio Smoker. So my search for Kosher Salt and info about curing and smoking, I bought Jeff Phillips book The Essential guide to Smoking Meat., which led me to your web page ant to my surprise you have Kosher Salt available in Australia and to add to my excitement the Salt was Australian Kosher salt. Possessing and using to brine my first piece of meat a chicken gives me the confidence to follow the recipes. I will smoke that the brim chicken with a Texus Rub. Another first time for me, smoking .

What can I say, its salt !
This salt is a good alternative to buying the expensive imported kosher salt. However, the grains aren’t quite as flat as the kosher salts that I’ve used previously but it will still do the job.

a great product with the right grain size
A nice decently intense salt. Crystal structures are larger than standard table salt, perfect for pinching. The bag it comes in is large and a bit cumbersome, so would definitely recommend having a salt cellar/pig ready to store portions of the salt in.
